Serves: 4-6

Ingredients:

  • 2Vera Mexicana Chilis
  • 1 onion
  • 3 cloves of garlic
  • Dash of cumin
  • 2 cans of black beans
  • Splash of chicken or vegetable stock
  • 1 lime
  • Salt and Pepper to taste

To serve:

  • Vera Mexicana Tostadas
  • Optional: your favorite salsa, cilantro, sour cream.

Description

We are not exaggerating when we say that this is the easiest and most delicious recipe for Refried Beans. You'll be transported to Mexico with each bite without having to leave your kitchen!

Steps

  1. Remove the stem and the seeds from the Ancho chile.
  2. Roast them in a pan over medium heat for five minutes.
  3. Add a bit of water to the pan and bring to a boil.
  4. Once it boils, move the chilis and water to a blender. Let rest for five minutes to rehydrate and then blend to form a chili paste.
  5. Finely chop your onions and garlic and add them, along with the cumin, to a pan with oil over medium-high heat.
  6. Once the onions become transparent, add the black beans and cook for five minutes.
  7. Add the chili paste and a bit of chicken stock to the pan and mash the beans with the bottom of a cup. If you prefer a smoother texture, you can also use a blender.
  8. Add more stock and let everything fry until it has the desired texture.
  9. Season with salt, pepper, and lime.
  10. Serve on your tostadas and add your favorite toppings such as cilantro, your favorite salsa, crumbled cheese or sour cream.
