  • 1 Vera Mexicana Vanilla Bean
  • Sugar (to taste)
  • 4 limes, sliced
  • 2-3 cm fresh ginger, diced
  • 240 ml rum
  • 360 ml ginger beer
  • Ice


The indulgent Mexican Vanilla Dark n' Stormy made with spiced rum, ginger beer, fresh ginger, lime and Mexican vanilla - a perfectly sophisticated cocktail. We added fresh ginger for a spicy kick which mingles with the vanilla while the rum tones down the sweetness.

An indulgent vanilla and ginger cocktail using some of our luxury Mexican Vanilla Beans for the perfect after-work drink. A sweet and spicy twist on the national drink of Bermuda!


  1. Butterfly a Mexican Vanilla Bean (cut lengthwise with a knife) and scrape out the seeds. Mix with a bit of sugar until well-incorporated.
  2. Cut lime in 4 lengthwise and cut it into quartered slices.
  3. Muddle the diced, fresh ginger, lime slices, and vanilla sugar from step 1 until you get a juicy and fragrant mixture.
  4. Add your rum of choice (see author notes) and give it a good stir – mixing all ingredients well.
  5. Add ice cubes (or crushed ice) and top off with ginger beer for a refreshing, yet warming summer cocktail. Salud!

Author notes

We used spiced rum for this cocktail, but you can substitute with your own favorite rum. A stronger rum makes the cocktail more potent, a dark rum will make it sweeter while a spiced rum mingles very well with the rest of the spices while toning down the sweetness a notch.
