Æbleskiver with Mexican Vanilla

Serves: 40 pieces

Ingredients:

  • 3 eggs
  • 75 g sugar
  • 1 Vera Mexicana Vanilla Bean, deseeded
  • 800 ml buttermilk
  • 600 g flour
  • 2 tsp baking soda
  • 1 pinch of salt
  • ½ tsp cardamon
  • 100 g melted butter
  • 1-2 tart apples
  • Butter or oil for frying
  • Powdered sugar (for garnishing)

Description

Eating æbleskiver is a Danish Christmas tradition – it’s kind of like a spherical form of pancake that is usually served with mulled wine during the month of December. Our Mexican vanilla bean contributes with warm, woody notes that pairs brilliantly with the sweet and spiced flavors of the pancake.

Steps

  1. Split the eggs into whites and yolks in separate bowls and whisk the whites until it forms stiff peaks.
  2. Whisk the yolks with the buttermilk, sugar and vanilla seeds until mixed. Add flour, baking soda, cardamon, melted butter and salt, and mix until everything is incorporated.
  3. Carefully fold the whites into the yolk-mix.
  4. Let the dough rest on the counter while you peel the apples. Once peeled, deseed the apples and cut them into 1x1 cm squares.
  5. Heat the pan at medium heat, and add a bit of butter or oil in each hole. Fill the holes up ¾ with the dough and add 1 piece of apple in the centre of each hole.
  6. Once you see air bubbles form in the dough and the sides have turned golden brown (about 2 minutes), flip the pancakes with a skewer or a toothpick. 
  7. Let the pancakes bake for another two minutes until the bottom is golden brown. Repeat the steps for the rest of the batter (keep the baked pancakes warm in the oven).
  8. Serve warm with powdered sugar and jam. Buen provecho!
